PUMPKIN SPICE GRANOLA

I was alway intimidated by making granola until I actually made it. It's as easy as getting stuck IG stalking food blogs. What's nice about this granola is that it's a healthy replacement for your morning cereal, and a great crunchy and naturally sweet snack option. Did I say I mention it was easy?

#GalTip: This makes a cheap, and cute gift to give coworkers, neighbors, friends and family.

Prep Time: 10 min.

Cook Time: 30 min.

Total Time: 40 min.

Makes: 8 Cups

INGREDIENTS

  • 3 cups rolled oats

  • 1 cup pecans

  • 1 cup pumpkin seeds/pepitas

  • 1/2 cup cashews

  • 2 tsp pumpkin spice (see my DIY version to make it yourself)

  • 1/2 tsp sea salt

  • 1 tsp vanilla extract

  • 1/3 cup pureed pumpkin (not pumpkin pie filling)

  • 1/4 cup coconut oil

  • 1/3-1/2 cup pure maple syrup (use based on sweetness preference)

  • optional: 1 egg white, whipped*

INSTRUCTIONS

1. Preheat oven to 350 degrees F.

2. Mix all dry ingredients together.

3. Add in vanilla, pumpkin, coconut oil and maple syrup and stir to combine.

4. Place mixture on a baking sheet lined with a silicone mat or parchment paper.

5. Add in optional egg white at this point.

6. Bake for 15 mins.

7. Remove from oven and turn over as much of the granola as you can.

8. Place back in oven for another 15 mins.

9. Remove from oven, and let cool for 20 mins before placing in a sealed jar or container.

10. Will keep for at least 2 weeks (if it lasts that long!)
